Southwestern Stuffed Potato
(Makes 1 serving)
1 medium potato
2 tbsp salsa
¼ avocado, sliced
⅓ cup (85 g) organic refried pinto beans
1 tsp chopped pickled jalapeños
Pierce the potato with a fork and microwave for 4-6 minutes, until soft (time will depend on your microwave). Remove from the microwave and place on a plate.
Place the beans in a small bowl and microwave for 90 seconds, until warm.
Slice the potato lengthwise and open it up to make a pocket. Add the beans, salsa, avocado, and jalapeños.
